The distinction is roughly this: a thermostat stuck shut causes overheating that can come and go with driving conditions and often pairs with erratic gauge behaviour, while a failed water pump causes a steadier climb as circulation is lost, sometimes with a leak. What to do when you suspect it

Treat overheating as a stop-driving event, because that is where the engine damage comes from.
